The Art of the Perfect Varkey

Varkey is one of the Nilgiris' most recognisable bakes: a crisp, layered biscuit with a tender crumb that shatters gently with every bite. At Nilgiribytes, we make ours the traditional way, in small batches, so that every pack reaches you fresh and fragrant.
The secret is in the folding
A good varkey starts with a simple dough – flour, fat, a little sugar and salt. The character comes from how the fat is worked into the dough and folded over again, creating thin layers. When the dough hits the oven, moisture in those layers turns to steam and pushes them apart, giving varkey its signature flake.
Time, temperature and patience
Rushing never helps a layered bake. The dough is rested so the gluten relaxes, making it easier to roll evenly without tearing. The bake is slow enough to dry the layers right through, yet gentle enough to leave a golden colour rather than a scorched crust. That balance is what separates a delicate varkey from a hard one.
- Weights are measured carefully so every batch behaves the same way.
- The dough is rested before rolling and folding.
- Bakes are watched closely for colour, not just the clock.
- Every batch is cooled fully before packing so it stays crisp.
Best enjoyed with
Varkey is at its best with a hot cup of tea or filter coffee, but it is just as good alongside fresh fruit, a bowl of curd or a scoop of vanilla. Store it in an airtight container away from moisture, and it will stay crisp for days.
A Nilgiri classic
What makes varkey special is not a secret ingredient but the care in the making – the folding, the resting and the watching. It is a humble bake with a long history in these hills, and we are proud to keep making it the slow way.
